Tomato Salads – “Greek” Tomato Salad



 Don’t you wish you were here at this Greek Fishing Village sitting outside eating your salad?


Whisk together:

2 T. extra-virgin olive oil

1 T. red wine vinegar

1 T. lemon juice

        1/2 tsp. dried oregano  



                     1 lb. tomatoes, cut into chunks

                                         1/2 seedless cucumber, halved lengthwise and cut  into chunks

                                                                                        1/2 green bell pepper, seeded and cut into thin strips                                                                                                                  

                       3/4 c. Kalamata olives, chopped

                      1 1/2 c. crumbled Feta cheese

                                                                                                     Place tomatoes, cucumbers, pepper, salt and pepper to taste in a bowl. Pour dressing over, toss. Gently toss in Feta.

Serve over lettuce
