Fried Green Tomatoes

This Southern favorite is made using green tomatoes (under-ripe red ones) and frying until golden brown. Serve with barbecued shrimp. Delicious!

1/2 c. all-purpose flour                                                                            

3 eggs, beaten

1/2 c. seasoned bread crumbs

salt and pepper

1 lb. green tomatoes, sliced 1/2 inch thick

1/2 c. Canola oil

1 t. butter

Place the flour, eggs and bread crumbs with salt and pepper to taste in 3 separate shallow bowls or pie plates. Dip the tomatoes first in flour, then into the eggs, and then into the bread crumbs, pressing to help adhere. Heat the oil and butter in large skillet over medium-high heat. Cook tomatoes until golden brown. Drain and serve.
