Broccoli Oriental Slaw

  

My girlfriend gave me this recipe (which I changed). You use Ramen noodles. You know the noodles that are 20 pkgs. for $10 or something like that. Ramen noodles are famous for keeping those college students with  full stomachs.

 

1 (1lb) pkg. broccoli slaw                                                                                                                                                                     

2 pkgs. Ramen Oriental noodle soup (chicken flavor)

1 cup sunflower seeds

1 large red pepper chopped

1 cup sliced almonds

1 bunch scallions, sliced

1 cup craisins or dried cranberries

Dressing

3/4 cup canola oil

1/3 cup apple cider vinegar

1/3 cup sugar

1 packet chicken stock from noodle pack

2 tbsp. soy sauce (optional)

Break up noodles and cook, drain and mix with nuts, slaw, craisins or cranberries, scallions, peppers. About 1/2 hour before serving, mix all together with dressing. Do ahead and refrigerate. It is even better the next day.

I make a large bowl and have it for a couple of days.

(The difference between my girlfriend’s recipe and mine is, she uses uncooked noodles. The original recipe calls for uncooked noodles but I do not like it that way.
