Easy Tomato Sauce

6 or 7 large plum tomatoes, chopped                                                                                                                               195

1 large onion, chopped

5 or 6 cloves garlic, chopped

1/2 cup red wine

Dried or fresh oregano, basil and/or fennel

salt and pepper

Saute chopped onions and garlic in 3 Tbsp. olive oil until translucent.

Add the wine and cook until it boils for about 2 minutes, just enough time to burn off the alcohol.

Add  totomatoes and cook on low to medium until they have broken down, 10 to 15 minutes.                                                                                     201

Add herbs, all or a combination of each and salt and pepper.

Cook another 10 to 15 minutes. You don’t have to cook the sauce for hours for it to be good.

Either use it right away or cool and put into freezer bags. They can be kept in the freezer for use over the winter when the tomatoes you buy taste like wet cardboard.

 

Tip: Buy bulk amouts of tomatoes at the end of the season when they are cheaper and you can make large quantities of sauce adjusting the ingredients.
